What is Cajun Food?

Cajun food is a style of cuisine that developed in Louisiana by the Acadians, who were originally from France and brought lots of French traditions with them, including French cooking styles. The Acadians were originally immigrants who settled in what is now Canada in a colony called New France. After being expelled by the British during the French and Indian War, many Acadians settled in Lousiana, where they came to be known as Cajuns, and where their descendants continue to live today.

 

While Cajun food is a product of the French Acadians, it also has Canadian, African, and Native American influences. Gumbo is one of the most well-known Cajun dishes and is used to describe a variety of stews under the Cajun umbrella. The word gumbo actually comes from West Africa and means “okra” which is the main ingredient in these stews. The Cajuns used natural resources in Louisiana such as sugar cane, rice, and crawfish to develop their own unique cuisine. Fish, pork, chicken, turkey, and shrimp are all also found in Cajun food.

 

Traditional Cajun meals are cooked in 3 pots. One pot is used for rice and cornbread, the second for vegetables, and the third for the main dish. Onions, bell-peppers, and celery are three staples found in many Cajun meals. Cajun food also uses seasonings like cayenne pepper, parsley, scallions, and bayleaf, though real Cajun food isn’t as spicy as common belief would hold. The emphasis is on a nice balance of flavors with a kick to it.
