Nori Knowledge

Are you in the know on nori? If you’re unfamiliar with the term, nori is that greenish black wrap that keeps your sushi together. It’s made from a kind of seaweed which is grown in Japan and China. Though nori is a relatively new concept in America (introduced by sushi chefs in the 1970’s) it has been harvested and consumed for at least 1,300 years in Japanese and Chinese cuisine traditions. The first written record of nori can be found in the “Taisho Ritsuryo,” a book of laws published in Japan in 701 A.D. Nori was included as a taxable agricultural product. It wouldn’t have been used for what we know as contemporary sushi back then, but it found a calling as a sushi wrap. Now, over 300,000 tons of nori are produced every year.

 

The seaweed used to make nori is an algae that grows on the surface of the ocean, which is harvested with nets, washed and shredded, and pressed and dried to make the nori sheets we’re familiar with. Nori is great if you’re watching your calorie intake: one sheet contains just 5 calories. It contains little in the way of carbs, protein, or fat. It does, however, contain plenty of iodine. One sheet meets 70% of your daily iodine requirements. While most people get their iodine from salt, this comes with the potential disadvantage of eating too much sodium. Eating nori is a great way to get iodine in your diet without the extra sodium. Nori also contains vitamins C and A, as well as potassium and magnesium. Who would have thought that seaweed could be so healthy, and delicious!
