Surprisingly, it has to do with gravity, of all things.

Land animals are constantly subjected to the force of gravity. In order to move, they have to use significant amounts of force, which means their muscles have to work hard. Muscles that work hard become tough, and when the meat from these muscles is raw, you can see and feel its toughness. By cooking it, you break down tissues that connect and toughen the muscle, making it easier to chew and tastier as well. This is why we like many of our meats such as beef and pork cooked.

Fish are also subject to the force of gravity, but this force is essentially negated by the buoyancy force of the water in which they live. Gravity pulls down, buoyancy pushes up, and the result is that fish feel almost weightless in the water. Because the force of gravity is so reduced, fish don’t have to work as hard to move through the water. This makes their muscle fibers softer and shorter. So even when the fish is raw, it has a soft smooth texture that is very enjoyable to eat.

Not only does gravity affect the muscles of a fish, so too does how the fish makes its energy. Fish that use oxygen to create energy transport the oxygen with a molecule that contains iron, and iron is red. Thus tuna, for example, has a deep red color. Fish that use other methods besides oxygen to make energy don’t have this red pigment, so their muscles are white.
