What is the History of Sushi?

The History of Sushi

 

Sushi as we know it was invented in 1827 in Japan, but before that sushi was just flavored rice, not rice and raw fish. Records dating back to the 2nd century indicate that people in China would salt fish and meat and let them ferment for a long time in order to preserve them. In the 10th century, the Japanese began stuffing fish with uncooked rice before they were fermented in order to speed up the fermentation process, which took between 2 and 3 months. The rice was discarded once the process was complete.

 

By the 15th century, the Japanese began to eat the fermented rice (instead of discarding it), which had a nice tangy flavor, from fish that was not completely fermented. This was called nama nare sushi. In the 16th century, vinegar was added to further reduce the fermentation time, as the vinegar was an effective substitute for the tangy flavor that previously could only be achieved through the long fermentation process.

 

As the reduced prep time for sushi made it easier to produce, different sushi styles and trends began to grow throughout Japan. Between 1827-29 in Tokyo, which was then known as Edo, Edo style sushi was developed as a street food. It was inexpensive, quick to prepare, and most importantly, incorporated raw fish (also known as sashimi) into the recipe. The combination of raw fish and tangy rice was a hit, and sushi as we know it was born.

 

As Japanese businesses expanded into the United States in the 1970’s, sushi restaurants started to open to cater to Japanese businessmen who had moved to the country. Americans, however, were reluctant to eat raw fish. Experimentation by sushi chefs led to the creation of the California roll, which substituted raw tuna with avocado. The California roll was a big success, and sushi’s popularity has grown ever since.
